Cinnamon Swirl Cheesecake is a decadent dessert featuring a buttery graham cracker crust, creamy vanilla cheesecake filling, and ribbons of spiced cinnamon-sugar swirled throughout. This rich and cozy treat brings the flavor of cinnamon rolls to a classic cheesecake.
Ingredients
- For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp melted butter
- For the cinnamon swirl:
- 1/3 cup brown sugar
- 1 tbsp ground cinnamon
- 1 tbsp all-purpose flour
- 2 tbsp melted butter
- For the cheesecake filling:
- 3 (8 oz) packages cream cheese, softened
- 3/4 cup granulated sugar
- 1/2 cup sour cream
- 3 large eggs
- 2 tsp vanilla extract
Instructions
- Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and wrap the bottom in foil for a water bath (optional).
- Make the crust: Mix graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of the pan. Bake for 8–10 minutes, then cool.
- Make the cinnamon swirl: Combine brown sugar, cinnamon, flour, and melted butter in a small bowl. Set aside.
- Make the filling: Beat softened cream cheese until smooth. Add granulated sugar and mix well. Blend in sour cream, then eggs one at a time, and vanilla. Mix just until combined.
- Pour half of the cheesecake batter into the crust. Drop spoonfuls of cinnamon mixture over the top and gently swirl with a knife.
- Repeat with the remaining batter and cinnamon mixture, swirling again.
- Place the pan in a water bath if using, and bake for 50–60 minutes or until the center is just set with a slight jiggle.
- Turn off oven, crack the door open, and let the cheesecake cool inside for 1 hour.
- Remove and refrigerate for at least 4 hours or overnight before serving.
