Description

Clafoutis is a classic French dessert made with fresh fruit, typically cherries, baked in a custard-like batter. Ingredients

  • 2 cups fresh sweet cherries, pitted

  • 2 tablespoons blanched slivered almonds

  • 3 large eggs

  • ½ cup granulated sugar (can reduce to ¼ cup)

  • 1 tablespoon brown sugar

  • ⅛ teaspoon salt

  • ½ cup all-purpose flour

  • 1 cup whole or 2% milk

  • ¾ teaspoon almond extract (can substitute with amaretto)

  • 1½ teaspoons vanilla extract

  • Powdered sugar, for dusting

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C).

  2. Prepare the Baking Dish: Butter and lightly flour a 9×9-inch or 10×7-inch baking dish. Scatter the cherries and slivered almonds over the bottom of the dish.

  3. Make the Batter: In a bowl, whisk together the eggs, granulated sugar, and brown sugar until combined. Add salt and flour, mixing until smooth. Then whisk in the milk, almond extract, and vanilla extract.

  4. Assemble: Pour the batter into the prepared dish over the cherries and almonds.

  5. Bake: Bake for 35 to 45 minutes, or until lightly browned and a tester inserted into the center comes out clean.

  6. Cool and Serve: Allow to cool slightly before dusting with powdered sugar. Serve warm or at room temperature.
