Description

Classic Tomato Bruschetta is a fresh and vibrant Italian appetizer made with toasted bread topped with a simple mixture of diced tomatoes, garlic, basil, and olive oil. It’s a light, flavorful dish perfect for entertaining or casual snacking.


Ingredients

  • 45 ripe Roma or cherry tomatoes, diced
  • 23 garlic cloves (2 minced, 1 whole for rubbing on bread)
  • 1/4 cup fresh basil leaves, finely chopped
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon balsamic vinegar (optional)
  • Salt and pepper to taste
  • 1 baguette or crusty Italian bread, sliced into 1/2-inch thick slices

Instructions

  1. Dice the tomatoes and place them in a mixing bowl.
  2. Mince two garlic cloves and finely chop the basil. Add to the tomatoes.
  3. Drizzle with olive oil and balsamic vinegar (if using), then season with salt and pepper. Mix well.
  4. Let the tomato mixture sit for 10–15 minutes to allow flavors to meld.
  5. Slice the baguette and grill or toast until golden and crispy on both sides.
  6. Rub the warm toast with the remaining garlic clove for extra flavor.
  7. Spoon the tomato mixture over the bread slices just before serving and enjoy immediately.
