Description

Coconut Lime Shortbread Cookies are buttery, tender cookies with bright lime zest and a subtle coconut flavor, crisp at the edges and melt-in-your-mouth soft inside.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lime zest
  • 1 tablespoon fresh lime juice
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup unsweetened shredded coconut
  • Powdered sugar or lime glaze (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and powdered sugar until smooth.
  3. Mix in the vanilla extract, lime zest, and lime juice.
  4. Add the flour and salt, mixing just until combined.
  5. Fold in the shredded coconut.
  6. Scoop or roll the dough into balls and place on the prepared baking sheet.
  7. Gently flatten each cookie with your fingers or the bottom of a glass.
  8. Bake for 12–15 minutes, until the edges are lightly golden.
  9. Allow cookies to cool completely before serving or adding optional glaze.
