Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lime zest
- 1 tablespoon fresh lime juice
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 3/4 cup unsweetened shredded coconut
- Powdered sugar or lime glaze (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and powdered sugar until smooth.
- Mix in the vanilla extract, lime zest, and lime juice.
- Add the flour and salt, mixing just until combined.
- Fold in the shredded coconut.
- Scoop or roll the dough into balls and place on the prepared baking sheet.
- Gently flatten each cookie with your fingers or the bottom of a glass.
- Bake for 12–15 minutes, until the edges are lightly golden.
- Allow cookies to cool completely before serving or adding optional glaze.
