Description

Ingredients
- 16–20 homemade or store-bought cookies (e.g., chocolate chip, sugar, or double chocolate)
- 1 quart of your favorite ice cream (vanilla, chocolate, strawberry, etc.)
- Optional: mini chocolate chips, sprinkles, crushed cookies, or chopped nuts for coating
Instructions
- If using homemade cookies, bake and let them cool completely.
- Let the ice cream soften at room temperature for 5–10 minutes.
- Place a scoop of ice cream on the flat side of one cookie.
- Top with another cookie and gently press to spread the ice cream evenly to the edges.
- Roll the sides in desired toppings such as sprinkles, chocolate chips, or nuts.
- Place finished sandwiches on a baking sheet and freeze for at least 1–2 hours until firm.
- Serve directly from the freezer and enjoy.
