Description

Cornmeal Mush is a comforting and versatile dish made from cornmeal, water, and salt. This creamy porridge can be enjoyed sweet with maple syrup or fruit, or savory with cheese and herbs. Perfect for breakfast or as a side dish, it’s a gluten-free, dairy-free meal that’s both simple and satisfying. A great way to start your day or complement your dinner!


Ingredients

  • 1 cup cornmeal

  • 4 cups water

  • ½ tsp salt

  • 1-2 tbsp butter or oil (optional)

  • Sweetener or toppings such as maple syrup, honey, brown sugar, or fresh fruit (optional)

Instructions

  • In a medium saucepan, bring the water to a boil over medium-high heat.

  • Gradually whisk in the cornmeal to avoid clumping, then reduce the heat to low.

  • Stir the mixture constantly as it thickens, about 5-7 minutes. If it becomes too thick, add more water to reach your desired consistency.

  • Stir in salt and butter or oil, if using. For a sweeter flavor, add sweetener at this stage, or wait until serving.

  • Once the cornmeal mush has thickened and is smooth, remove from heat.

  • Serve hot with your choice of toppings, such as maple syrup, brown sugar, fresh fruit, or a sprinkle of cinnamon.

Sweet Cornmeal Mush: Add maple syrup, honey, or brown sugar while cooking or drizzle over the top when serving. For extra warmth, stir in cinnamon or nutmeg.Savory Cornmeal Mush: Add grated cheese, sautéed vegetables, or herbs for a savory variation.
