Description

Ingredients

  • 2 cups cottage cheese (full-fat or low-fat)
  • 3 tablespoons maple syrup or honey

  • 2 tablespoons peanut butter or almond butter (optional)
  • 1/4 cup berries or chopped fruit (optional)
  • 2 tablespoons crushed nuts (optional)

Instructions

  1. In a blender or food processor, combine cottage cheese, maple syrup (or honey), and vanilla extract. Blend until completely smooth and creamy.
  2. Fold in optional mix-ins such as chocolate chips, peanut butter, or chopped fruit.
  3. Line a small baking dish or loaf pan with parchment paper.
