Description

Cottage Cheese Sweet Potato Beef Bowl is a balanced and hearty meal that’s packed with protein, healthy carbs, and wholesome ingredients. The combination of tender ground beef, creamy cottage cheese, and roasted sweet potatoes creates a deliciously satisfying bowl that’s perfect for lunch, dinner, or meal prep. The creamy texture of the cottage cheese complements the savory flavors of the beef and the natural sweetness of the roasted sweet potatoes, making each bite both nutritious and flavorful.

Ingredients

  • 1 lb ground beef (or turkey for a leaner option)
  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1/2 teaspoon paprika (optional, for extra flavor)
  • 1/2 teaspoon garlic powder
  • 1/2 cup cottage cheese (full-fat or low-fat based on preference)
  • 1 tablespoon fresh parsley or cilantro (optional, for garnish)
  • 1 tablespoon lime juice (optional, for a tangy kick)
  • 1/2 cup corn or black beans (optional, for added texture and flavor)

Instructions

  1. Prepare the sweet potatoes: Preheat your oven to 400°F (200°C). Peel and dice the sweet potatoes into small cubes. Toss them with 1 tablespoon of olive oil, salt, pepper, paprika (if using), and garlic powder. Spread the sweet potatoes evenly on a baking sheet and roast for 20-25 minutes, or until they’re tender and slightly caramelized, flipping halfway through.
  2. Cook the ground beef: While the sweet potatoes are roasting, heat a large skillet over medium heat. Add the ground beef, breaking it apart with a spoon as it cooks. Cook until browned, about 6-8 minutes, and drain any excess fat. Season with salt and pepper to taste. Optionally, add some chili powder or cumin for extra flavor.
  3. Assemble the bowls: Once the sweet potatoes are roasted and the beef is cooked, it’s time to assemble your bowls. Divide the roasted sweet potatoes and cooked ground beef into bowls. Add 2-3 tablespoons of cottage cheese on top of each serving. You can also add a squeeze of lime juice for a tangy flavor. Garnish with fresh parsley or cilantro for extra freshness.
  4. Serve: Serve immediately while the sweet potatoes are warm, or refrigerate the bowls for meal prep. Enjoy!

Notes

Add greens: Add some leafy greens like spinach or kale for an extra boost of nutrition. You can sauté them in the same pan as the beef or layer them under the beef and sweet potatoes.Swap the beef: Use chicken, turkey, or a plant-based protein like lentils or tempeh for a variation on the protein source.Spicy version: Add some diced jalapeños or hot sauce to the beef for a spicy kick.Add cheese: If you’re a cheese lover, sprinkle some shredded cheese (cheddar, mozzarella, or a spicy cheese) on top of the cottage cheese before serving.
