Description

Cranberry Pistachio Energy Bites are a wholesome, no-bake snack packed with natural sweetness, nutty crunch, and satisfying texture, perfect for a quick and nutritious snack.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup natural peanut butter or almond butter
  • 1/3 cup honey or maple syrup
  • 1/2 cup dried cranberries, chopped
  • 1/3 cup shelled pistachios, roughly chopped
  • 2 tablespoons chia seeds or ground flaxseed
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, chopped cranberries, chopped pistachios, and chia seeds. Stir until evenly distributed.
  2. Add the nut butter, honey (or maple syrup), vanilla extract, and salt to the bowl.
  3. Mix thoroughly until all ingredients are well combined and the mixture holds together when pressed.
  4. If the mixture feels too dry, add a small spoonful of nut butter or honey. If too sticky, add a few extra oats.
  5. Scoop about one tablespoon of the mixture and roll it between your palms to form bite-sized balls.
  6. Place the energy bites on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.
  7. Once set, transfer to an airtight container for storage.

Notes
