Ingredients
- 2 pounds russet or Yukon Gold potatoes, peeled and cubed
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 1/2 cup whole milk (or more, as needed)
- 1 teaspoon garlic powder (optional)
- Salt and pepper, to taste
- Fresh parsley or chives, chopped (optional, for garnish)
Instructions
- Cook the potatoes: Place the peeled and cubed potatoes in a large pot and cover with cold water. Bring to a boil over high heat, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are fork-tender.
- Drain and mash: Drain the potatoes and return them to the pot. Use a potato masher or hand mixer to mash the potatoes until smooth and fluffy. For extra smooth potatoes, use a potato ricer.
- Add cream cheese, butter, and milk: Add the softened cream cheese, butter, and half of the milk to the mashed potatoes. Continue mashing or mixing until everything is well combined and creamy. Add more milk, a little at a time, to reach your desired consistency.
- Season: Season with salt, pepper, and garlic powder (if using). Taste and adjust the seasoning as needed.
- Serve: Transfer the mashed potatoes to a serving dish and garnish with chopped parsley or chives for a fresh touch. Serve immediately.
Notes
