Ingredients
- 2 lbs boneless, skinless chicken breasts or thighs
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil or butter
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 10 oz mushrooms (white or cremini), sliced
- 2 tbsp all-purpose flour
- 2 cups chicken broth
- 1 cup sour cream
- 4 oz cream cheese, softened
- 2 tsp Dijon mustard
- 1 tbsp Worcestershire sauce
- 1 tsp paprika
- 12 oz egg noodles, rice, or mashed potatoes (optional, for serving)
- 2 tbsp fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Season chicken with salt and pepper. Heat olive oil or butter in a skillet over medium-high heat. Sear chicken on both sides until golden but not fully cooked. Transfer to prepared baking dish.
- In the same skillet, sauté onions and garlic until softened. Add mushrooms and cook until browned.
- Sprinkle flour over vegetables, stir, and cook for 1–2 minutes. Slowly whisk in chicken broth until smooth.
- Reduce heat to low. Stir in sour cream, cream cheese, Dijon mustard, Worcestershire sauce, and paprika until the sauce is creamy and smooth.
- Pour sauce evenly over chicken in the baking dish. Cover with foil.
- Bake for 25–30 minutes, until chicken is cooked through and sauce is bubbling.
- Remove from oven, garnish with fresh parsley, and serve over noodles, rice, or mashed potatoes.
