Ingredients

  • 12 ounces penne or rotini pasta

  • 2 cups cooked chicken, diced (boneless skinless breasts or rotisserie)

  • 1 ½ cups cherry tomatoes (halved) or 1 can (14.5 oz) diced tomatoes, drained

  • 1 cup heavy cream

  • ½ cup chicken broth

  • 1 teaspoon Italian seasoning

  • ¾ teaspoon salt

  • ½ teaspoon black pepper

  • ¼ cup fresh basil, chopped

  • 1 ½ cups shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

Optional Additions:

  • 1 cup fresh spinach

  • ¼ teaspoon red pepper flakes

  • ½ cup ricotta cheese

Instructions

  1. Preheat Oven:
    Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

  2. Cook the Pasta:
    Boil pasta according to package directions until al dente. Drain and set aside.

  3. Prepare the Sauce:
    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant (about 30 seconds).

  4. Add tomatoes and cook for 3–4 minutes until slightly softened.

  5. Pour in heavy cream and chicken broth. Stir in Italian seasoning, salt, and black pepper. Simmer for 5–7 minutes until slightly thickened.

  6. Stir in chopped fresh basil and spinach (if using) until wilted.
