Ingredients
- 4 boneless, skinless chicken breasts (or thighs)
- 2 tbsp olive oil or butter
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 4 cups fresh spinach leaves
- 1 tsp Italian seasoning (optional)
- 1/4 tsp red pepper flakes (optional)
- Salt and black pepper, to taste
Instructions
- Season chicken with salt, pepper, and Italian seasoning.
- Heat olive oil or butter in a large skillet over medium heat.
- Cook chicken for 5–6 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.
- Add onion to the skillet and sauté until softened, about 3–4 minutes.
- Stir in garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and heavy cream, scraping the bottom to release browned bits.
- Stir in Parmesan cheese and simmer until slightly thickened.
- Add spinach and cook until wilted, about 1–2 minutes.
- Return chicken to skillet, spooning sauce over the top. Simmer for 2–3 minutes to heat through.
- Serve hot over pasta, rice, or with crusty bread.
