Description

Creamy Chicken and Spinach is a quick, elegant one-pan dish featuring juicy chicken breasts in a rich Parmesan cream sauce with fresh spinach. Perfect for serving over pasta, rice, or with crusty bread, it’s both comforting and wholesome, ready in under 30 minutes.


Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 2 tbsp olive oil or butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 cups fresh spinach leaves
  • 1 tsp Italian seasoning (optional)
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper, to taste

Instructions

  1. Season chicken with salt, pepper, and Italian seasoning.
  2. Heat olive oil or butter in a large skillet over medium heat.
  3. Cook chicken for 5–6 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.
  4. Add onion to the skillet and sauté until softened, about 3–4 minutes.
  5. Stir in garlic and cook for 1 minute until fragrant.
  6. Pour in chicken broth and heavy cream, scraping the bottom to release browned bits.
  7. Stir in Parmesan cheese and simmer until slightly thickened.
  8. Add spinach and cook until wilted, about 1–2 minutes.
  9. Return chicken to skillet, spooning sauce over the top. Simmer for 2–3 minutes to heat through.
  10. Serve hot over pasta, rice, or with crusty bread.
