Description

Creamy Cucumber Pasta Salad is a light, refreshing, and creamy dish that combines fresh cucumbers, creamy dressing, and tender pasta. Perfect for summer, barbecues, or as a side dish, this salad is easy to make and a versatile addition to any meal.


Ingredients

  • 8 oz elbow macaroni or any pasta of your choice
  • 2 medium cucumbers, peeled and thinly sliced
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons white wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh dill or parsley for garnish (optional)

Instructions

  1. Cook the pasta: Cook the pasta according to the package instructions. Drain and rinse with cold water to stop the cooking process. Let it cool.
  2. Prepare the cucumbers: Peel and slice the cucumbers. Sprinkle them with salt and let them sit for 10-15 minutes to release excess moisture. Pat them dry with a paper towel.
  3. Make the dressing: In a bowl, combine mayonnaise, sour cream, white wine vinegar, Dijon mustard, garlic powder, and onion powder. Mix until smooth. Add salt and pepper to taste.
  4. Assemble the salad: In a large bowl, combine the cooled pasta, cucumbers, and dressing. Toss until everything is evenly coated.
  5. Chill and serve: Cover the salad and refrigerate for at least 1 hour before serving to allow the flavors to meld together. Garnish with fresh dill or parsley if desired.
