Description

Ingredients

  • 1 pound large shrimp, peeled and deveined

Instructions

  • Cook the shrimp: Heat the olive oil in a large skillet over medium-high heat. Season the shrimp with salt and pepper, then add them to the skillet. Cook for 2-3 minutes per side, or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

  • Make the sauce: In the same skillet, add the minced garlic and cook for 1 minute, or until fragrant. Be careful not to burn the garlic.

  • Add sun-dried tomatoes: Stir in the chopped sun-dried tomatoes and cook for another 1-2 minutes.

  • Add cream and broth: Pour in the heavy cream and chicken broth (or white wine), stirring to combine. Bring the mixture to a simmer and cook for 3-5 minutes, allowing the sauce to thicken slightly.

  • Add spinach and cheese: Stir in the fresh spinach, Parmesan cheese, dried basil, and oregano. Continue cooking until the spinach wilts and the cheese melts into the sauce.

  • Return the shrimp: Add the cooked shrimp back to the skillet, tossing them gently in the sauce. Let everything simmer together for 2-3 minutes to ensure the shrimp is coated and heated through.
