Ingredients
- 12 small baby potatoes (or any small potatoes)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried rosemary or thyme (optional)
- Salt and pepper, to taste
- Fresh parsley, chopped (optional, for garnish)
- Parmesan cheese (optional, for extra flavor)
Instructions
- Boil the potatoes: Bring a large pot of salted water to a boil, add the potatoes, and cook for 12-15 minutes until tender. Drain and let them cool slightly.
- Smash the potatoes: Once cool enough to handle, gently smash each potato using a flat surface like the bottom of a glass or a potato masher. Don’t press too hard—just flatten them slightly.
- Season the potatoes: In a small bowl, combine olive oil, garlic powder, onion powder, rosemary (or thyme), salt, and pepper. Drizzle this over the smashed potatoes and toss to coat evenly. Optionally, sprinkle grated Parmesan cheese over the potatoes.
- Preheat the air fryer: Preheat the air fryer to 400°F (200°C) for 3 minutes.
- Cook the potatoes: Place the smashed potatoes in the air fryer basket in a single layer, ensuring they’re not overcrowded. Air fry at 400°F (200°C) for 12-15 minutes, flipping halfway through, until golden and crispy on the edges.
- Serve: Once crispy, remove the potatoes from the air fryer. Garnish with freshly chopped parsley and an extra sprinkle of Parmesan cheese if desired. Serve hot and enjoy!
Notes
