Description

Crockpot Beef Tips and Gravy is a hearty, comforting dish featuring tender beef chunks slow-cooked in a rich, savory gravy. It’s an easy, flavorful meal perfect for busy weeknights or relaxed weekends.


Ingredients

  • 2 lbs stew beef or beef sirloin, cut into chunks
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp soy sauce (optional)
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 tbsp cornstarch
  • 2 tbsp cold water
  • Salt and pepper to taste
  • 1 tbsp olive oil or butter (optional, for browning)

Instructions

  1. Optional: In a skillet over medium-high heat, heat olive oil or butter and brown the beef tips until seared on all sides.
  2. Transfer the beef to the crockpot along with chopped onion, minced garlic, beef broth, Worcestershire sauce, soy sauce (if using), and cream of mushroom soup.
  3. Stir well to combine. Cover and cook on low for 7–8 hours or high for 4–5 hours, until beef is tender.
  4. 30 minutes before serving, whisk cornstarch with cold water to form a slurry and stir it into the crockpot to thicken the gravy.
  5. Season with salt and pepper to taste.
  6. Serve hot over mashed potatoes, egg noodles, or rice.

Notes

Use red wine in place of some broth for a richer flavor.Add mushrooms, carrots, or peas for extra vegetables.Swap the cream of mushroom soup for cream of celery or onion.Browning the beef first adds depth but is optional.This recipe freezes well for up to 3 months.
