Description
Crockpot Chicken, Potatoes, and Green Beans is a hearty one-pot comfort meal made with tender chicken, buttery potatoes, and seasoned green beans. Slow-cooked with simple spices, it’s a wholesome and convenient dinner for busy nights.
Ingredients
- 4 boneless, skinless chicken breasts or thighs
- 1 1/2 lbs baby potatoes (or diced russet potatoes)
- 1 lb fresh or frozen green beans
- 3 tbsp olive oil or melted butter
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and black pepper, to taste
- Optional: 1/4 cup chicken broth or 2 tbsp lemon juice
Instructions
- Grease the bottom of the crockpot lightly with oil or nonstick spray.
- Place chicken in the center of the crockpot.
- Arrange potatoes on one side and green beans on the other.
- In a small bowl, mix olive oil or melted butter with garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper.
- Drizzle seasoning mixture evenly over chicken, potatoes, and green beans.
- Optional: Add chicken broth or lemon juice for extra flavor and moisture.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is cooked through and potatoes are tender.
- Serve warm directly from the crockpot or plate individually.
