Description

Ingredients

For the Steak and Veggies:

  • 1 lb beef sirloin or stew meat, cut into bite-sized cubes

  • 8 oz mushrooms, sliced (button, cremini, or your favorite variety)

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 1/2 cup beef broth

  • 1/4 cup soy sauce (or low-sodium soy sauce)

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon dried thyme

  • 1 teaspoon garlic powder

  • 1/2 teaspoon black pepper

  • 1 tablespoon cornstarch (optional, for thickening)

  • 2 tablespoons water (for cornstarch slurry)

  • 2 tablespoons olive oil (optional, for browning the beef)

Instructions

  • Brown the Steak (Optional, but Recommended): Heat olive oil in a large skillet over medium-high heat. Season steak cubes with salt, pepper, and garlic powder. Brown the steak in batches, cooking for 2-3 minutes on each side. This step adds extra flavor, but can be skipped if you’re short on time.

  • Add the Ingredients to the Crockpot: Place the browned (or unbrowned) steak cubes in the Crockpot. Add the sliced mushrooms, diced onion, and minced garlic.

  • Prepare the Sauce: In a small bowl, combine the beef broth, soy sauce, Worcestershire sauce, dried thyme, garlic powder, black pepper, and a pinch of salt. Stir to combine, then pour the sauce over the steak and mushrooms.

  • Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the steak is tender and the flavors have melded.

  • Thicken the Sauce (Optional): If you prefer a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons water and stir it into the Crockpot during the last 30 minutes of cooking. This will help thicken the sauce.

  • Serve: Once the steak bites are tender and the sauce has thickened, give everything a good stir. Serve the steak and mushrooms over mashed potatoes, rice, or noodles. Garnish with fresh herbs like parsley if desired.
