This Crockpot Sweet Potato Casserole is a comforting, sweet, and easy-to-make side dish featuring creamy mashed sweet potatoes and a crunchy pecan topping, perfect for holidays or family dinners.
Ingredients
- 4 large sweet potatoes, peeled and chopped
- 1/2 cup butter, divided
- 1/2 cup brown sugar
- 1/2 cup milk or cream
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 2 eggs (optional)
- 1/2 cup all-purpose flour
- 1/2 cup chopped pecans
- 1/4 cup brown sugar (for topping)
- 1 cup mini marshmallows (optional)
Instructions
- Peel and chop the sweet potatoes into evenly sized cubes.
- Add sweet potatoes to the crockpot along with 1/4 cup butter, 1/2 cup brown sugar, cinnamon, salt, and milk.
- Cover and cook on high for 3–4 hours or low for 6–7 hours, until fork-tender.
- Mash the sweet potatoes directly in the crockpot until smooth. Stir in vanilla extract and eggs if using.
- In a separate bowl, mix flour, 1/4 cup brown sugar, chopped pecans, and 1/4 cup softened butter to make the topping.
- Sprinkle the topping evenly over the mashed sweet potatoes.
- Cover and cook for an additional 30–45 minutes on high.
- If using marshmallows, sprinkle on top during the last 10–15 minutes of cooking until melted and golden.
