Description

This Crockpot Sweet Potato Casserole is a comforting, sweet, and easy-to-make side dish featuring creamy mashed sweet potatoes and a crunchy pecan topping, perfect for holidays or family dinners.


Ingredients

  • 4 large sweet potatoes, peeled and chopped
  • 1/2 cup butter, divided
  • 1/2 cup brown sugar
  • 1/2 cup milk or cream
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 2 eggs (optional)
  • 1/2 cup all-purpose flour
  • 1/2 cup chopped pecans
  • 1/4 cup brown sugar (for topping)
  • 1 cup mini marshmallows (optional)

Instructions

  1. Peel and chop the sweet potatoes into evenly sized cubes.
  2. Add sweet potatoes to the crockpot along with 1/4 cup butter, 1/2 cup brown sugar, cinnamon, salt, and milk.
  3. Cover and cook on high for 3–4 hours or low for 6–7 hours, until fork-tender.
  4. Mash the sweet potatoes directly in the crockpot until smooth. Stir in vanilla extract and eggs if using.
  5. In a separate bowl, mix flour, 1/4 cup brown sugar, chopped pecans, and 1/4 cup softened butter to make the topping.
  6. Sprinkle the topping evenly over the mashed sweet potatoes.
  7. Cover and cook for an additional 30–45 minutes on high.
  8. If using marshmallows, sprinkle on top during the last 10–15 minutes of cooking until melted and golden.
