Ingredients
- 8 slices of white or whole wheat bread (or gluten-free bread)
- 1 medium cucumber, thinly sliced
- 1/4 cup cream cheese (or Greek yogurt for a lighter option)
- 2 tablespoons mayonnaise
- 1 tablespoon fresh dill, chopped (optional)
- 1 tablespoon fresh parsley, chopped (optional)
- 1 teaspoon lemon juice
- Salt and pepper, to taste
Instructions
- In a small bowl, combine the cream cheese, mayonnaise, lemon juice, and fresh herbs (dill and parsley). Mix until smooth. Add salt and pepper to taste.
- Wash and peel the cucumber if you prefer, or leave the skin on for added crunch. Slice the cucumber thinly using a sharp knife or mandoline slicer.
- Spread a generous amount of the cream cheese mixture on one side of each slice of bread.
- Layer the cucumber slices on top of the spread in a single, even layer.
- Place the sandwich slices together, gently press down, and cut them into quarters or triangles. Remove the crusts for an elegant presentation, if desired.
- Serve immediately as a light snack or appetizer. Alternatively, cover the sandwiches with a damp cloth and refrigerate until ready to serve.
