Description
Date Muffins are naturally sweet, moist, and full of rich, caramel-like flavor from chopped dates. Perfect for breakfast, snacking, or lunchboxes, these easy-to-make muffins are comforting, nourishing, and freezer-friendly.
Ingredients
- 1 cup chopped pitted dates
- 3/4 cup boiling water
- 1/2 tsp baking soda
- 1 1/2 cups all-purpose flour (or whole wheat flour)
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp ground cinnamon (optional)
- 1 large egg
- 1/3 cup brown sugar or maple syrup
- 1/2 cup milk (dairy or non-dairy)
- 1/4 cup melted butter or oil
- 1 tsp vanilla extract
- Optional add-ins:
- 1/3 cup chopped walnuts or pecans
- 1/4 cup chocolate chips
- 1 tsp orange zest
- 2 tbsp shredded coconut
Instructions
- Preheat oven to 350°F (175°C) and line or grease a muffin tin.
- In a bowl, combine chopped dates, baking soda, and boiling water. Let sit for 10–15 minutes to soften.
- In a large mixing bowl, whisk together the flour, baking powder, salt, and cinnamon (if using).
- In a separate bowl, mix the egg, brown sugar or maple syrup, milk, melted butter or oil, and vanilla extract.
- Stir the softened date mixture into the wet ingredients.
- Add the wet mixture to the dry ingredients and stir until just combined. Fold in any optional add-ins.
- Divide the batter evenly into the muffin cups, filling each about 3/4 full.
- Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
