Description

These Delicious Longevity Noodles are a savory stir-fried noodle dish symbolizing long life, prosperity, and good fortune. Made with long wheat noodles, fresh vegetables, and a rich Asian-style sauce, this easy one-pan recipe is perfect for celebrations, festive gatherings, or a quick and satisfying dinner.

Ingredients

  • 8 oz long wheat noodles or egg noodles

  • 1 tablespoon sesame oil

  • 1 tablespoon vegetable oil

  • 3 cloves garlic, minced

  • 1 teaspoon fresh ginger, minced

  • 3 green onions, sliced

  • 1 cup carrots, julienned

  • 1 cup bell peppers, thinly sliced

  • 1 cup mushrooms, sliced

  • 3 tablespoons soy sauce

  • 1 tablespoon oyster sauce

  • 1 tablespoon hoisin sauce

  • 1 teaspoon brown sugar

  • 1 teaspoon rice vinegar

  • ¼ cup vegetable broth

  • 1 tablespoon sesame seeds

Instructions

  • Cook the noodles according to the package instructions until just tender. Drain and set aside.

  • Heat vegetable oil in a large wok or skillet over medium-high heat.

  • Add minced garlic and ginger and stir for about 30 seconds until fragrant.

  • Add carrots, bell peppers, and mushrooms. Stir-fry for 3–4 minutes until slightly softened.

  • Add the cooked noodles to the pan and toss gently with the vegetables.

  • In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, brown sugar, rice vinegar, and vegetable broth.

  • Pour the sauce over the noodles and toss until evenly coated.

  • Drizzle sesame oil over the noodles and mix gently.

  • Cook for 2–3 minutes so the noodles absorb the sauce.

  • Remove from heat and garnish with sliced green onions and sesame seeds.

  • Serve immediately while warm.

Notes

Avoid cutting the noodles when possible, as long strands traditionally symbolize longevity and good fortune.Toss cooked noodles with a small amount of oil to prevent sticking.Add proteins such as chicken, shrimp, tofu, or beef for a more filling meal.Extra vegetables like broccoli, snap peas, cabbage, or baby corn work well in this dish.Adjust the sauce with chili paste or red pepper flakes if you prefer a spicy version.
