Ingredients

For the Crust

  • 1 ¼ cups all-purpose flour

  • ½ cup unsalted butter, cold and cubed

  • 2 tablespoons granulated sugar

  • ¼ teaspoon salt

  • 2–3 tablespoons cold water

For the Filling

  • 8 oz goat cheese, softened

  • 4 oz cream cheese, softened

  • 2 large eggs

  • ⅓ cup honey

  • 1 teaspoon vanilla extract

  • 1 teaspoon lemon zest

  • Pinch of salt

For the Topping

  • 3 tablespoons honey

  • ¼ teaspoon crushed red pepper flakes

  • 2 tablespoons chopped pistachios or walnuts

  • 1 teaspoon fresh thyme leaves

Instructions

  • Preheat the oven to 350°F (175°C).

  • In a bowl, combine flour, sugar, and salt for the crust.

  • Add the cold cubed butter and work it into the flour mixture until it resembles coarse crumbs.

  • Gradually add cold water and mix until the dough forms.

  • Shape the dough into a disk, wrap it, and refrigerate for 30 minutes.

  • Roll the chilled dough on a lightly floured surface and press it into a tart pan, covering the bottom and sides evenly.

  • Prick the crust with a fork and bake for 10–12 minutes until lightly set.

  • In a mixing bowl, beat goat cheese, cream cheese, eggs, honey, vanilla extract, lemon zest, and salt until smooth and creamy.

  • Pour the filling into the partially baked crust.

  • Bake for 25–30 minutes until the filling is set and lightly golden.

  • In a small bowl, mix honey with crushed red pepper flakes to create the hot honey topping.

  • Remove the tart from the oven and allow it to cool slightly.

  • Drizzle the hot honey over the tart and sprinkle with chopped nuts and fresh thyme.

  • Slice and serve warm or at room temperature.
