Ingredients

For the Pie Crust:

For the Apple Filling:

  • 6 medium apples (Granny Smith, Honeycrisp, or a mix of tart and sweet apples)

  • ¾ cup granulated sugar

  • 2 tbsp all-purpose flour

  • 1 tsp ground cinnamon

  • ¼ tsp ground nutmeg

  • 1 tbsp lemon juice

  • 1 tsp vanilla extract

For the Streusel Topping:

  • ¾ cup all-purpose flour

  • ½ cup old-fashioned rolled oats

  • ½ cup packed brown sugar

  • ½ tsp ground cinnamon

  • ¼ tsp salt

  • ½ cup unsalted butter, cold and cubed

Instructions

  • Make the Pie Crust:

    • In a large bowl, combine the flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add ice water until the dough begins to come together.

    • Knead the dough briefly, form it into a disk, wrap in plastic, and chill for at least 30 minutes.

  • Prepare the Apple Filling:

    • Peel, core, and slice the apples into ¼-inch thick slices.

    • In a large bowl, toss the apple slices with sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract until evenly coated.

  • Make the Streusel Topping:

    • In a medium bowl, combine flour, oats, brown sugar, cinnamon, and salt.

    • Cut in the cold butter until the mixture forms coarse crumbs.

  • Assemble the Pie:

    • Preheat the oven to 375°F (190°C). Roll out the dough and fit it into a 9-inch pie pan. Add the apple filling, mounding the apples slightly in the center.

    • Sprinkle the streusel topping over the apples evenly.

  • Bake the Pie:

    • Place the pie on a baking sheet to catch any drips. Bake for 50-60 minutes or until the crust is golden, the streusel is crispy, and the filling is bubbling.

    • If the crust or topping browns too quickly, cover with foil and continue baking.
