Description

Easter Egg Rice Krispie Treats are a fun and festive twist on the classic Rice Krispies treats. Shaped like eggs and decorated with vibrant colors, these treats are perfect for Easter or any springtime celebration. They’re easy to make and feature a delicious blend of gooey marshmallows, crispy Rice Krispies, and sweet chocolate drizzle, making them a fun and indulgent treat for all ages.


Ingredients

  • 6 cups Rice Krispies cereal
  • 1 (10 oz) bag mini marshmallows
  • 4 tablespoons unsalted butter
  • 1/2 teaspoon vanilla extract (optional)
  • 1/2 cup white chocolate chips (or candy melts)
  • Food coloring (in your choice of pastel colors)
  • Sprinkles or mini candies (optional, for decoration)

Instructions

  1. Prepare the pan: Grease a 9×13-inch baking dish or line it with parchment paper. Alternatively, prepare a silicone mold in the shape of eggs for perfect Easter egg shapes.
  2. Melt the marshmallows and butter: In a large saucepan, melt the butter over medium heat. Once melted, add the mini marshmallows and stir until completely melted and smooth. Remove from heat and stir in the vanilla extract.
  3. Mix in the Rice Krispies: Add the Rice Krispies cereal to the melted marshmallow mixture and stir until well combined.
  4. Shape the treats: Transfer the Rice Krispies mixture to the prepared baking dish or mold. Press the mixture gently to ensure it’s evenly distributed. If using a baking dish, use a buttered spatula to press the mixture into a flat layer. If using a mold, spoon the mixture into the egg-shaped cavities and press firmly to compact.
  5. Cool the treats: Allow the treats to cool for about 15-20 minutes. If using a baking dish, once cooled, cut the treats into egg shapes with a knife or egg-shaped cookie cutter. If using a mold, pop the treats out once cooled.
  6. Decorate the treats: Melt the white chocolate chips (or candy melts) in the microwave in 20-second intervals, stirring in between, until fully melted and smooth. Once melted, divide the chocolate into small bowls and add a few drops of food coloring to each bowl to create different pastel colors.
  7. Drizzle and decorate: Drizzle the colored white chocolate over the shaped Rice Krispies treats. Use a spoon or piping bag to create colorful streaks. Decorate with sprinkles, mini candies, or any other fun Easter decorations you prefer.
  8. Let it set: Allow the chocolate to set for about 30 minutes, or until completely firm, before serving.

Notes

Feel free to use dark, milk, or white chocolate for the drizzle depending on your preference.

For added texture, mix in mini marshmallows or other fun candies into the Rice Krispies mixture.

If you prefer, you can skip the food coloring for a simpler look and still achieve a delicious treat!
