Description

Easy Chicken Piccata is a quick and flavorful Italian-American dish featuring thin chicken cutlets in a zesty lemon butter sauce with capers. Perfect for weeknights or elegant dinners.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced (optional)
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 2 tablespoons capers, drained
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Slice each chicken breast in half horizontally to create thin cutlets. Lightly pound to even thickness if needed.
  2. Season the chicken with salt and pepper, then dredge in flour, shaking off any excess.
  3. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 3–4 minutes per side until golden and cooked through. Transfer to a plate and cover to keep warm.
  4. In the same pan, reduce heat to medium and melt the butter. Add garlic (if using) and sauté for about 30 seconds.
  5. Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan.
  6. Add the capers and simmer the sauce for 3–5 minutes, letting it reduce slightly.
  7. Return the chicken to the pan and spoon the sauce over the top. Let simmer for another 2 minutes to reheat the chicken and blend flavors.
  8. Garnish with fresh parsley and serve immediately.
