Description

Easy Egg Drop Soup is a light and comforting soup made with delicate egg ribbons in a savory broth, perfect for a quick meal or soothing starter.


Ingredients

  • 4 cups chicken broth or vegetable broth
  • 3 large eggs, beaten
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 2 green onions, sliced
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp white pepper or black pepper
  • 1/2 tsp sesame oil

Instructions

  1. Bring the broth to a gentle boil in a saucepan over medium heat.
  2. In a small bowl, whisk together the cornstarch and water until smooth.
  3. Stir the cornstarch mixture into the simmering broth to slightly thicken it.
  4. Reduce heat to low and gently stir the broth in a circular motion.
  5. Slowly drizzle in the beaten eggs while continuing to stir to create egg ribbons.
  6. Season with salt and white pepper to taste.
  7. Remove from heat and stir in sesame oil.
  8. Garnish with sliced green onions and serve immediately.

Notes
