Ingredients
- 4 boneless, skinless chicken breasts (or thighs)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon butter
- 1/2 cup chicken broth
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and pepper, to taste
- 1 tablespoon fresh parsley, chopped (optional, for garnish)
- 1 teaspoon lemon juice (optional, for a burst of freshness)
Instructions
- Pat the chicken breasts or thighs dry with paper towels and season both sides with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken to the skillet and cook for 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F or 74°C). Remove the chicken from the skillet and set aside.
- In the same skillet, add the butter and minced garlic. Sauté for about 1 minute until the garlic becomes fragrant and golden brown (be careful not to burn it). Add the chicken broth, thyme, rosemary, and a pinch of salt and pepper. Stir the sauce and let it simmer for 2-3 minutes, allowing it to thicken slightly.
- Return the cooked chicken to the skillet, spooning the sauce over the top. Let it simmer for another 2-3 minutes to allow the chicken to absorb some of the flavor.
- Remove the skillet from heat. If desired, squeeze a little fresh lemon juice over the chicken for extra brightness. Garnish with freshly chopped parsley and serve hot.
