Description

Easy Gingerbread Waffles are fluffy, warmly spiced waffles made with molasses, brown sugar, and holiday spices. Perfect for cozy mornings, they’re quick to prepare and filled with nostalgic gingerbread flavor.

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 2 tbsp brown sugar
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/4 cup molasses
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract

Instructions

  1. Preheat waffle iron according to manufacturer instructions.
  2. In a large bowl, whisk together flour, baking powder, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, whisk together brown sugar and eggs until smooth. Add milk, molasses, melted butter, and vanilla extract; whisk to combine.
  4. Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
  5. Lightly grease waffle iron if needed. Pour batter into the preheated waffle iron and cook according to your waffle maker’s directions until golden brown and cooked through.
  6. Serve warm with butter, maple syrup, whipped cream, or your favorite toppings.

Notes

Use unsulfured molasses for the best gingerbread flavor—avoid blackstrap molasses. For crispier waffles, cook a little longer and avoid stacking after baking.Batter can be made ahead and refrigerated overnight. Stir before use.Freeze leftover waffles and reheat in the toaster or oven.Add chocolate chips or chopped nuts for texture.
