Description

Easy no-bake peanut butter haystacks are quick, crunchy, and creamy treats made with peanut butter, chow mein noodles, and melted chips. Perfect for holidays, potlucks, or an easy sweet snack, these clusters require no baking and come together in under an hour.


Ingredients

  • 1 cup creamy peanut butter
  • 1 cup butterscotch chips or white chocolate chips
  • 3 cups chow mein noodles or crunchy pretzel sticks
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: 1/2 cup mini marshmallows
  • Optional: 1/3 cup peanuts or chopped nuts

Instructions

  1. Line a baking sheet with parchment or wax paper.
  2. In a large microwave-safe bowl, combine peanut butter and butterscotch chips (or white chocolate chips).
  3. Microwave in 30-second intervals, stirring after each, until melted and smooth.
  4. Stir in vanilla extract and a pinch of salt.
  5. Add chow mein noodles and gently fold until fully coated.
  6. If using, mix in mini marshmallows and/or chopped nuts.
  7. Drop spoonfuls of the mixture onto the prepared baking sheet.
  8. Chill in the refrigerator for 30–45 minutes or until firm.
  9. Store in an airtight container at room temperature or in the fridge.

Notes

Use sunflower seed butter and omit nuts for a nut-free version.Swap butterscotch chips with chocolate chips for a different flavor.Mix in coconut flakes, dried cranberries, or crushed pretzels for variety.Decorate with sprinkles or melted candy melts for a festive twist.Make smaller portions for bite-sized party treats or kid-friendly snacks.
