Description

Easy protein cookies are chewy, nutritious, and packed with protein, making them the perfect post-workout snack, quick breakfast, or healthy dessert. Simple to make with pantry staples and ready in just 20 minutes.


Ingredients

  • 1 cup protein powder (vanilla or chocolate)
  • 1 cup rolled oats or oat flour
  • 1/2 cup peanut butter or almond butter
  • 1/3 cup honey or maple syrup
  • 1 large egg (or flax egg for vegan)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 cup dark chocolate chips (optional)
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix peanut butter, honey, egg, and vanilla until smooth.
  3. Stir in protein powder, oats, baking powder, and salt until combined.
  4. Fold in chocolate chips if using.
  5. Scoop dough onto baking sheet and flatten slightly.
  6. Bake for 8–10 minutes, until lightly golden.
  7. Let cool for a few minutes before serving.
