Ingredients
- 1 cup protein powder (vanilla or chocolate)
- 1 cup rolled oats or oat flour
- 1/2 cup peanut butter or almond butter
- 1/3 cup honey or maple syrup
- 1 large egg (or flax egg for vegan)
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/4 cup dark chocolate chips (optional)
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix peanut butter, honey, egg, and vanilla until smooth.
- Stir in protein powder, oats, baking powder, and salt until combined.
- Fold in chocolate chips if using.
- Scoop dough onto baking sheet and flatten slightly.
- Bake for 8–10 minutes, until lightly golden.
- Let cool for a few minutes before serving.
