Ingredients
- 2 large eggs
- 1/2 cup milk (dairy or non-dairy)
- 1 scoop (about 30g) vanilla or unflavored protein powder
- 1/4 cup oat flour or all-purpose flour
- 1/8 tsp salt
- 1 tsp vanilla extract or a pinch of cinnamon (optional)
- Butter or oil for greasing the pan
Instructions
- In a blender or mixing bowl, combine eggs, milk, protein powder, flour, salt, and optional vanilla or cinnamon. Blend or whisk until smooth.
- Let the batter rest for 5–10 minutes to improve texture.
- Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
- Pour about 1/4 cup of batter into the pan, swirling to coat the bottom evenly.
- Cook for 1–2 minutes until edges lift and bottom is lightly golden.
- Flip and cook another 30–60 seconds on the other side.
- Repeat with remaining batter. Fill crepes as desired and serve warm.
