Description

This Easy Raspberry Mousse is a light, creamy, and elegant dessert with a sweet-tart raspberry flavor and velvety texture. Perfect for entertaining or an everyday treat, it’s a no-bake, make-ahead dessert that looks as impressive as it tastes.


Ingredients

  • 2 cups fresh or frozen raspberries
  • 1/3 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon unflavored gelatin
  • 3 tablespoons cold water
  • 1 cup heavy whipping cream

Instructions

  1. In a saucepan over medium heat, combine raspberries and sugar. Cook until raspberries break down and mixture becomes syrupy, about 5–7 minutes.
  2. Strain mixture through a fine mesh sieve to remove seeds. Set raspberry puree aside to cool.
  3. In a small bowl, sprinkle gelatin over cold water. Let bloom for 5 minutes, then gently warm until gelatin dissolves completely.
  4. Stir dissolved gelatin into cooled raspberry puree. Add lemon juice and vanilla extract. Mix well and let cool slightly.
  5. In a separate bowl, whip heavy cream to stiff peaks.
  6. Gently fold whipped cream into the raspberry mixture until smooth and fully combined.
  7. Spoon into serving glasses or bowls. Chill for at least 2 hours or until set.
  8. Serve chilled with optional garnish of fresh berries or mint leaves.
