Ingredients
- 2 cups fresh or frozen raspberries
- 1/3 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon unflavored gelatin
- 3 tablespoons cold water
- 1 cup heavy whipping cream
Instructions
- In a saucepan over medium heat, combine raspberries and sugar. Cook until raspberries break down and mixture becomes syrupy, about 5–7 minutes.
- Strain mixture through a fine mesh sieve to remove seeds. Set raspberry puree aside to cool.
- In a small bowl, sprinkle gelatin over cold water. Let bloom for 5 minutes, then gently warm until gelatin dissolves completely.
- Stir dissolved gelatin into cooled raspberry puree. Add lemon juice and vanilla extract. Mix well and let cool slightly.
- In a separate bowl, whip heavy cream to stiff peaks.
- Gently fold whipped cream into the raspberry mixture until smooth and fully combined.
- Spoon into serving glasses or bowls. Chill for at least 2 hours or until set.
- Serve chilled with optional garnish of fresh berries or mint leaves.
