Description
This easy zaatar and sumac focaccia is a fluffy, golden bread infused with Middle Eastern spices. A fusion of Italian technique and bold Levantine flavors, it’s perfect as a side, snack, or part of a mezze spread.
Ingredients
- 3 1/2 cups all-purpose flour
- 1 1/4 cups warm water
- 2 1/4 tsp active dry yeast (1 packet)
- 1 tsp sugar or honey
- 1 1/2 tsp salt
- 1/4 cup olive oil (plus more for drizzling)
- 2 tbsp zaatar spice blend
- 1 tbsp ground sumac
Instructions
- In a bowl, combine warm water, yeast, and sugar. Let sit for 5–10 minutes until foamy.
- Stir in flour and salt until a shaggy dough forms.
- Knead the dough on a floured surface for 8–10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for 1–1.5 hours, or until doubled in size.
- Preheat the oven to 400°F (200°C).
- Transfer the risen dough to a greased 9×13-inch baking pan and gently press it into shape. Dimple the surface using your fingers.
- Drizzle generously with olive oil and sprinkle evenly with zaatar and sumac.
- Bake for 20–25 minutes, or until the focaccia is golden brown.
- Let it cool slightly before slicing and serving.
