Description

These Egg and Sprats Canapés are elegant, bite-sized appetizers featuring a creamy egg mixture topped with rich, savory sprats. Perfect for holiday gatherings, afternoon tea, or cocktail parties, this easy canapé recipe combines simple ingredients into a refined and flavorful starter that looks as impressive as it tastes.

Ingredients

  • 4 hard-boiled eggs, finely chopped

  • 1 can sprats in oil, drained

  • 2 tablespoons mayonnaise

  • 1 teaspoon Dijon mustard

  • 1 tablespoon fresh dill, finely chopped

  • Salt, to taste

  • Black pepper, to taste

  • 12–16 small slices of baguette or crackers

  • Butter, softened (for spreading)

Instructions

  • Spread a thin layer of softened butter on each slice of baguette or cracker. Set aside.

  • In a bowl, combine finely chopped hard-boiled eggs, mayonnaise, Dijon mustard, and fresh dill. Mix until creamy but slightly textured. Season with salt and black pepper to taste.

  • Spoon a small amount of the egg mixture onto each prepared slice.

  • Gently place a sprat on top of each canapé. Use whole sprats or cut into smaller pieces if needed.

  • Garnish with additional dill if desired.

  • Arrange on a serving platter and refrigerate for 15–20 minutes before serving for best flavor.

Notes

Butter creates a moisture barrier to prevent soggy bread.Use lightly toasted baguette slices for extra crunch.Add a squeeze of lemon juice for brightness.Finely chopped pickles or capers add extra tang.Assemble shortly before serving for the freshest texture.
