Description

Eggnog is a rich, creamy holiday drink made with eggs, milk, heavy cream, and warming spices like nutmeg, cinnamon, and cloves. It’s a festive treat that can be enjoyed non-alcoholic or spiked with rum or bourbon.


Ingredients

  • 6 large eggs
  • 3/4 cup sugar
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground nutmeg (plus extra for garnish)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 cup dark rum (optional)
  • 1/2 cup bourbon (optional)

Instructions

  1. In a medium bowl, whisk together the eggs and sugar until smooth and pale in color.
  2. In a saucepan, combine the milk, heavy cream, nutmeg, cinnamon, and cloves. Heat over medium heat, stirring occasionally until the mixture is hot but not boiling (about 5 minutes).
  3. Slowly pour about 1 cup of the hot milk mixture into the egg mixture while whisking constantly to avoid scrambling the eggs. Gradually add the egg mixture back into the saucepan with the remaining milk mixture. Continue to cook on low heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon (about 5-7 minutes). Be careful not to let it boil.
  4. Remove the saucepan from heat and stir in the vanilla extract. If making an alcoholic version, add the rum and bourbon. Let the eggnog cool for about 15-20 minutes.
  5. Transfer the eggnog to a large pitcher or bowl and refrigerate for at least 4 hours or overnight to allow it to chill and develop its flavors.
  6. When ready to serve, stir the eggnog and pour into glasses. Garnish with a sprinkle of nutmeg and enjoy!

Notes

For a dairy-free version, use almond milk or coconut milk in place of regular milk and cream.To make vegan eggnog, substitute the eggs with silken tofu and use plant-based milk and cream.Store leftover eggnog in an airtight container in the refrigerator for up to 3 days.If you prefer less sweetness, reduce the sugar and taste before adding more.Feel free to add more vanilla or experiment with other spices like ginger or allspice to enhance the flavor.
