Ingredients

For the Cookie Dough

  • 3 cups all-purpose flour

For the Filling

  • ¾ cup peach jam or apricot jam

  • 4 oz cream cheese or pastry cream

  • 2 tablespoons powdered sugar

For Decorating

  • ½ cup milk or peach syrup

  • Red and yellow food coloring

  • ¾ cup granulated sugar

  • Fresh mint leaves (optional)

Instructions

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

  • Add the eggs and vanilla extract, mixing until fully incorporated.

  • Stir in the milk and mix gently.

  • In a separate bowl, whisk together flour, baking powder, and salt.

  • Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.

  • Scoop small portions of dough and roll them into smooth balls, placing them on the prepared baking sheets.

  • Bake for 12–15 minutes, until the bottoms are lightly golden while the tops remain pale.

  • Allow the cookies to cool completely. Carefully scoop a small hollow from the flat side of each cookie half.

  • Mix the removed cookie crumbs with jam, cream cheese or pastry cream, and powdered sugar to create the filling.

  • Spoon a small amount of filling into one cookie half and sandwich it with another to form a round peach shape.

  • Lightly dip each cookie into milk or peach syrup tinted with red and yellow food coloring.

  • Roll the cookies in granulated sugar to coat evenly.

  • Garnish with a small mint leaf on top if desired to resemble a peach stem.
