Description

A refreshing summer salad combining sweet, juicy watermelon with salty feta cheese, fresh herbs, and a light dressing. Perfect for picnics, barbecues, or as a quick side dish, this salad is colorful, vibrant, and full of flavor.


Ingredients

  • 6 cups seedless watermelon, cubed
  • 1 cup feta cheese, crumbled or cubed
  • 1/4 cup fresh mint or basil leaves, chopped
  • 1/4 cup red onion, thinly sliced (optional)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lime juice or balsamic glaze
  • Salt and black pepper, to taste

Instructions

  1. Cut the watermelon into bite-sized cubes and place in a large serving bowl.
  2. Add the crumbled or cubed feta cheese.
  3. Sprinkle with fresh mint or basil and add sliced red onion if using.
  4. Drizzle with olive oil and lime juice (or balsamic glaze).
  5. Toss gently to combine, being careful not to break the watermelon pieces.
  6. Season lightly with salt and black pepper to taste. Serve immediately.
