Description

Fiesta Chicken is a bold, flavorful slow cooker dish made with tender chicken, black beans, corn, tomatoes, and zesty taco seasoning. It’s a versatile, one-pot meal perfect for busy weeknights, meal prep, or feeding a crowd.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained (or 1.5 cups frozen corn)
  • 1 can (10 oz) diced tomatoes with green chilies (such as Rotel)
  • 1 cup salsa
  • 1 packet (1 oz) taco seasoning
  • 4 oz cream cheese (optional, for creamy version)
  • 1 cup shredded cheddar or Mexican blend cheese (optional, for serving)
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Place the chicken in the bottom of the slow cooker.
  2. Add black beans, corn, diced tomatoes with green chilies, salsa, and taco seasoning over the chicken.
  3. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is tender and cooked through.
  4. About 30 minutes before serving, add cream cheese if using. Let it melt, then stir to combine.
  5. Shred the chicken with two forks and mix well with the rest of the ingredients.
  6. Serve hot, topped with shredded cheese and fresh cilantro if desired. Enjoy over rice, in tacos, or as a dip.

Notes

Add jalapeños or spicy salsa for extra heat.Omit cream cheese for a dairy-free version.Use chicken thighs for a more flavorful and juicy option.Serve over rice, in tacos, burritos, or as a hearty dip with tortilla chips.To make it vegetarian, omit chicken and double the beans.
