Ingredients
- 2 lbs boneless, skinless chicken breasts or thighs
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained (or 1.5 cups frozen corn)
- 1 can (10 oz) diced tomatoes with green chilies (such as Rotel)
- 1 cup salsa
- 1 packet (1 oz) taco seasoning
- 4 oz cream cheese (optional, for creamy version)
- 1 cup shredded cheddar or Mexican blend cheese (optional, for serving)
- Fresh cilantro, chopped (optional, for garnish)
Instructions
- Place the chicken in the bottom of the slow cooker.
- Add black beans, corn, diced tomatoes with green chilies, salsa, and taco seasoning over the chicken.
- Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is tender and cooked through.
- About 30 minutes before serving, add cream cheese if using. Let it melt, then stir to combine.
- Shred the chicken with two forks and mix well with the rest of the ingredients.
- Serve hot, topped with shredded cheese and fresh cilantro if desired. Enjoy over rice, in tacos, or as a dip.
