Instructions

Preheat the oven to 375°F (190°C). Grease an 8-inch round cake pan and line the bottom with parchment paper. Lightly dust with cocoa powder if desired.

In a heatproof bowl, melt the chopped chocolate and butter together using a double boiler or microwave in 20–30 second intervals, stirring until smooth.

Stir the granulated sugar into the melted chocolate mixture until well combined.

Add the eggs one at a time, whisking well after each addition until the batter becomes smooth and glossy.

Mix in the vanilla extract and salt.

Pour the batter into the prepared cake pan and smooth the top evenly.

Place the cake pan inside a larger baking dish and carefully pour hot water around it to create a water bath, reaching about halfway up the sides of the cake pan.

Bake for 20–25 minutes, until the edges are set and the center is slightly soft.

Remove the cake from the oven and allow it to cool completely in the pan.
