Description

French Carrot Salad, also known as Salade de Carottes Râpées, is a simple and flavorful dish with grated carrots dressed in a tangy mustard vinaigrette. It’s a light, healthy salad full of fresh flavors, perfect as a side or snack.

Ingredients

  • 4 large carrots, peeled and grated
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon white wine vinegar
  • 1 teaspoon honey (optional)
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • 1 small garlic clove, minced (optional)

Instructions

  1. Peel and grate the carrots using a box grater or a food processor to get fine shreds.
  2. In a small bowl, whisk together the olive oil, Dijon mustard, white wine vinegar, honey (if using), and a pinch of salt and pepper until the dressing is smooth and well combined.
  3. In a large bowl, combine the grated carrots and minced garlic (if using). Pour the dressing over the carrots and toss gently to coat evenly.
  4. Stir in the fresh parsley, giving the salad a burst of color and freshness.
  5. Let the salad sit for about 10-15 minutes to allow the flavors to meld together before serving.

Notes

This salad can be stored in the refrigerator for up to 2 days, but it is best enjoyed fresh as the carrots may become slightly limp after sitting in the dressing for too long.If you want a creamier dressing, mix in a tablespoon of tahini, vegan mayo, or Greek yogurt. For extra flavor and texture, consider adding toasted nuts like almonds or walnuts, or even some raisins or chopped apples.Feel free to swap fresh parsley with mint, cilantro, or tarragon for a twist. This salad is naturally vegan and gluten-free, making it a great option for various diets.
