Description

A moist and comforting fresh apple cake filled with tender apple chunks and warm spices, perfect for fall, holidays, or an everyday homemade dessert.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 large eggs
  • 3/4 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 3 cups fresh apples, peeled and diced
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a baking pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, mix the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
  5. Fold in the diced apples and chopped nuts, if using.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for about 15 minutes before slicing or serving.

Notes

Firm apples like Granny Smith or Honeycrisp work best.The cake tastes even better the next day as flavors develop.Nuts are optional and can be omitted.Serve warm or at room temperature.
