Ingredients
- 2 ripe avocados, diced
- 1 cup roma or cherry tomatoes, diced
- 1/3 cup red onion, finely diced
- 1 jalapeño, finely chopped (optional, seeds removed for less heat)
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons fresh lime juice
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
Instructions
- Cut the avocados in half, remove the pits, and dice the flesh into chunks. Place in a mixing bowl.
- Dice the tomatoes and red onion and add to the bowl with the avocado.
- Finely chop the jalapeño (if using) and cilantro, then add to the mixture.
- Squeeze in the fresh lime juice.
- Season with salt and black pepper to taste.
- Gently toss everything together until well combined, being careful not to mash the avocado.
- Serve immediately or chill for 10–15 minutes before serving.
