Ingredients
- 3 cans (15 oz each) whole kernel corn, drained (or 4 cups fresh cooked corn)
- 1 red bell pepper, diced
- 4 green onions, chopped
- 1 1/2 cups shredded cheddar cheese
- 1 cup mayonnaise
- 3 cups chili cheese Fritos, slightly crushed
Instructions
- In a large mixing bowl, combine corn, red bell pepper, green onions, shredded cheddar, and mayonnaise. Stir until evenly coated.
- Just before serving, fold in the chili cheese Fritos to maintain their crunch.
- Serve immediately and enjoy cold.
