Description

Frito Corn Salad is a creamy, crunchy, and flavorful side dish made with sweet corn, cheese, mayo, and chili cheese Fritos. It’s quick, refreshing, and always a hit at potlucks, barbecues, and summer gatherings.


Ingredients

  • 3 cans (15 oz each) whole kernel corn, drained (or 4 cups fresh cooked corn)
  • 1 red bell pepper, diced
  • 4 green onions, chopped
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup mayonnaise
  • 3 cups chili cheese Fritos, slightly crushed

Instructions

  1. In a large mixing bowl, combine corn, red bell pepper, green onions, shredded cheddar, and mayonnaise. Stir until evenly coated.
  2. Just before serving, fold in the chili cheese Fritos to maintain their crunch.
  3. Serve immediately and enjoy cold.

Notes
