Description

A rich and comforting pasta dish featuring tender salmon, a buttery garlic sauce, and fresh herbs. Ready in under 30 minutes, it’s perfect for both weeknight dinners and special occasions.

Ingredients

  • 4 salmon fillets, skin removed
  • 12 oz pasta of your choice (spaghetti, fettuccine, or penne)
  • 3 tbsp butter
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • Salt and black pepper, to taste
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Cook pasta in salted boiling water according to package directions. Reserve 1 cup of pasta water, then drain.
  2. Season salmon with salt and black pepper. Heat olive oil in a skillet and sear salmon 3–4 minutes per side until golden and flaky. Remove and set aside.
  3. In the same skillet, melt butter and sauté garlic until fragrant.
  4. Add lemon juice and a splash of reserved pasta water to create a sauce.
  5. Flake the salmon into large chunks and return to the pan. Toss gently in the garlic butter sauce.
  6. Add drained pasta and Parmesan cheese. Toss until coated, adjusting consistency with more pasta water if needed.
  7. Garnish with parsley and red pepper flakes before serving.

Notes

Use shrimp or chicken instead of salmon for variation.Add veggies like spinach, cherry tomatoes, or asparagus for extra nutrition.Whole wheat pasta or zucchini noodles make it lighter.A splash of white wine adds depth to the sauce.Store leftovers in the fridge for up to 3 days; reheat gently with water or broth.
