Ingredients
- 1.5 lbs steak (sirloin, ribeye, or New York strip), cut into bite-sized pieces
- 1 lb baby potatoes or Yukon gold potatoes, halved or quartered
- 2 tbsp olive oil
- 2 tbsp butter
- 4 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- Optional: 1 tsp chopped rosemary or thyme
Instructions
- Heat a large skillet over medium-high heat and add olive oil.
- Add chopped potatoes, season with salt, pepper, and paprika, and cook for 10–15 minutes, stirring occasionally, until crispy and fork-tender. Remove and set aside.
- In the same skillet, add more oil if needed, then sear steak bites in a single layer for 2–3 minutes per side until browned and cooked to your desired doneness. Cook in batches if necessary.
- Reduce heat to medium and return cooked potatoes to the pan.
- Add butter and minced garlic, stirring to coat the steak and potatoes evenly. Cook for 1–2 more minutes until garlic is fragrant and butter is melted.
- Sprinkle with chopped parsley and optional herbs. Serve immediately.
