Description

Gateaux Alsaciens is a traditional French dessert from the Alsace region. This buttery, tender cake is often enhanced with a touch of fruit or nuts, creating a simple yet delicious treat perfect for any occasion.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup ground almonds (optional, but adds a delightful texture)
  • ½ cup milk
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, salt, and baking powder. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. Stir in the ground almonds (if using) and milk, mixing until smooth.
  6. Pour the batter into the prepared cake pan, spreading it out evenly.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Once cooled, dust the top of the cake with powdered sugar before serving.

Notes

For a fruit variation, add fresh berries or sliced apples on top of the batter before baking. For a nut variation, try using hazelnuts, walnuts, or pistachios in place of almonds. For a spiced version, add a pinch of cinnamon or nutmeg to the dry ingredients. To make the cake more moist, add a tablespoon of sour cream or yogurt to the batter. This cake can also be frozen for up to 2 months. Wrap it tightly in plastic wrap and foil before freezing.
