Ingredients
- 2 pounds Yukon Gold or red potatoes
- 1 small onion, finely chopped
- 1/3 cup apple cider vinegar
- 2 tablespoons sugar
- 1 tablespoon Dijon mustard
- 1/2 cup chicken broth
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Boil the potatoes in salted water until fork-tender, about 15–20 minutes. Drain and let cool slightly, then slice while still warm.
- In a large skillet over medium heat, sauté the chopped onion in 1 tablespoon of olive oil or reserved fat until softened, about 3–4 minutes.
- Add apple cider vinegar, sugar, Dijon mustard, and chicken broth to the skillet. Stir to combine and bring to a simmer.
- Add the sliced warm potatoes to the skillet and toss gently to coat in the dressing.
- Simmer for 5–7 minutes, allowing the potatoes to absorb the flavors and the liquid to slightly reduce.
- Season with salt and black pepper to taste.
- Garnish with fresh parsley if desired and serve warm.
