Description

Grandma’s Creamy Italian Cucumber Salad is a crisp, tangy side dish featuring fresh cucumbers, red onion, and a creamy Italian dressing. It’s light, refreshing, and perfect for summer gatherings or everyday meals.


Ingredients

  • 3 medium cucumbers, thinly sliced
  • 1/2 small red onion, thinly sliced
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tsp Italian seasoning
  • 1 tbsp white vinegar or lemon juice
  • Salt and pepper, to taste

Instructions

  1. Wash cucumbers and slice them thinly along with the red onion.
  2. In a medium bowl, whisk together mayonnaise, sour cream, Italian seasoning, vinegar or lemon juice, salt, and pepper until smooth.
  3. Add cucumber and onion slices to the dressing and toss until evenly coated.
  4. Cover and refrigerate for at least 1 hour before serving to let the flavors meld.
  5. Serve chilled.

Notes

For less watery salad, salt cucumbers and let them sit for 20 minutes, then pat dry before mixing.Use English cucumbers for fewer seeds and less water content.This salad tastes even better after a few hours of chilling.
